Quinoa, Bloody Quinoa
So, not bloody, but I've got U2 on the brain. Forgive me.
Quinoa for breakfast yesterday. It was awesome. I've tried quinoa for breakfast before, but it always left me feeling a little blah. Like something was missing. Then, dark chocolate was added. Oh me, oh my! Fantastic.
This morning I discovered what it is about quinoa for breakfast that I am not a fan of. Eating it reheated. It just dries out, even though I added more almond milk. I now know to make a small batch and leave it at that. Maybe a more of a pain, but better than wasting it down the drain.
Dinner last night was just a thrown together chicken cutlet and some green beans. I was late getting to the grocery store and by the time I got home, I needed to have dinner in the oven immediately so I could hit yoga and that was the quickest thing I could think of. It was so boring and bland. And just the way that I hate chicken.

Yummy, yummy in my tummy
Thanks for the song, Yo Gabba Gabba. It is for sure, one of my favorite songs, dinner time phrases, whatever, to encourage my kids to eat and get them excited about food. Not always that successful.
Tonight, I made these super yummy enchiladas, thanks to The Joy of Clean Eating. I did change them up a bit. Like, I didn't have any squash in the house, so I used lean ground beef instead. Beef. Squash. Totally the same. LOL I have to tell you, when I made this enchilada sauce, oh my goodness, it was divine. I was sitting there, dipping some of the left over meat and onion mixture into the sauce and gobbling. It.Was.Delish! I also used Cannelloni beans instead of lentils. We just ate lentils last night, and it was a dish that didn't end well, but I will try again. And, back to enchiladas...
Miss Beans went to town on them, before I could even get the rest of the plates made. Mr Bear didn't touch it, but that isn't a shocker. And he will see it in front of his face again. I am an awesome mom! HA! That boy will enjoy more food, so help me. Just 1 enchilada and a small spinach salad and I was full. Papa regretted getting a second helping, but he just couldn't resist the yumminess.
